Coming Home: A menu by Chef Cyd Thomlinson

Cyd Thomlinson presents a 5-course menu of seasonal British game, seafood and a celebration of the English countryside.

A graduate of the Whitelock’s kitchen, our good friend Chef Cyd Thomlinson is now based at the acclaimed nose-to-tail restaurant St John Bread and Wine in London.

Since moving to St John Bread and Wine, Cyd has continued to develop his culinary expertise and to explore his love of British and seasonal game, fish and the ingredients of the countryside.

As we love Cyd, and we also love seasonal produce, it only felt right to invite Cyd back to Whitelock’s to deliver a menu celebrating fresh, interesting British ingredients.

In Cyd’s own words: “I’ve revisited old ideas, reworked some of my favourite dishes, and applied my new skills and knowledge to create a five course tasting menu that celebrates the season, the things I’ve gone away to learn. The menu also celebrates the place that gave me the opportunity to start something as special as our Dinner Club.”

Pickled mackerel, green sauce, fermented tomatoes, barley cake
