We welcome back an old friend Chef Cyd Thomlinson for September’s Dinner Club. Since starting out his culinary journey as CDP in the Whitelock’s kitchen and quickly being promoted to Junior Sous Chef, Cyd’s talent was clear for everyone to see.
Currently continuing his kitchen education at the critically acclaimed St John Bread and Wine in London his return north to the Whitelock’s kitchen is not to be missed.
In Cyd’s own words: “I’ve revisited old ideas, reworked some of my favourite dishes, and applied my new skills and knowledge to create a five course tasting menu that celebrates the season, the things I’ve gone away to learn. The menu also celebrates the place that gave me the opportunity to start something as special as our Dinner Club.”

Pickled mackerel, green sauce, fermented tomatoes, barley cake
Confit squirrel, pickled chicory and garlic
Poached salt hake, chive sauce, burnt shallot, wilted rocket
Pigeon, mushroom and spelt, blackberry jelly
Rosehip and hazelnut tart, bay leaf cream
